ragi mudde

Ingredients for ragi mudde :

  1. Raagi flour - 2 cups
   2. Cooked rice or cooked broken rice (optional) - 1/2 cup
   3. Water - 2 cups

Description to prepare ragi mudde:

 1.Place a non-stick deep pan on the stove.
   2.Pour the water and allow it to boil.
   3.When water is boiling add the cooked rice and allow it to boil for 2 minutes.
   4.Then spoon the ragi flour into the centre of the boiling water. Please note that the raagi flour once poured into the water should not be mixed.
   5.The raagi flour has to cook for about 10 minutes .Though it will look as though the flour is not being cooked, the water from the sides of the pan will flow into the flour and the mixture will be cooked.
   6.After ten minutes , when the water is nearly fully absorbed mix the flour quickly with a wooden ladle and transfer the mass onto a wooden board .
   7.While the mixture is hot, roll the flour into balls by wetting your hands. 8.Ragi Mudde is now ready to serve.
